En brændende kærlighed til italiensk gastronomi!

Når man kører rundt og besøger slagtere i det nordlige Italien, er der, undervejs, masser af tid til at tænke.
Eksempelvis om pizzaer. Om gode råvarer. Om drømmen om en forno a legna – en brændefyret pizzaovn. Og om at savne en høj gastronomisk kvalitet på pizzeriaerne hjemme i Aarhus. Det var netop, hvad Simon, som er en af de to ejere af Pizza Propria, gjorde i december 2015.
Og sådan startede fortællingen om Pizza Propria.

Kvalitet over hele linjen

Råvarerne bliver importeret fra de bedste slagtere og oste-, mel- og tomatproducenter i pizzaens moderland og får kyndig og kærlig behandling af uddannede italienske pizzabagere – på italiensk “pizzaioli”.
Og så er der ovnen. Det er i den, det guddommelige skabes. Vores ovn er speciallavet, importeret fra Firenze og muret op på stedet. Den bliver fyret op med dansk træ. Ilden, træet og ovnen giver noget helt særligt til pizzaerne på Pizza Propria.
En snert af røg og bål, og så bages pizzaerne ved meget høj temperatur. Pizzaerne er færdigbagt på 1-2 minutter. Ovnen bager ved helt op til 500 grader, i modsætning til almindelige pizzaovne, som opererer omkring 300 graders varme.

Pizza behøver ikke være junk

Pizza Propria er ikke et snobbet gourmetsted, alle skal kunne kunne være med!
Vi vil gerne hæve kvalitetsniveauet på pizza i Danmark så eftertrykkeligt, at udlandet også får øjnene op for, at vi i Pizza Propria er med i toppen. En pizza behøver bestemt ikke være usund junk.
Det er ikke politisk korrekt at fremhæve de tynde frem for de tykke, men i sandhedens tjeneste smager en tynd pizzabund bare bedre end en tyk pizzabund. Det bør ikke være et diskussionsemne. I Pizza Propria laver vi tynde pizzabunde i napolitansk stil, fordi vi mener, det er de bedste!
